Paneer Pulao


INGREDIENTS

  • 1 cup rice (soaked 15 minutes)
  • 1 tbsp ghee
  • 1 bay leaf / tej patta
  • 15-20 small sized cubes paneer / cottage cheese
  • 1 tsp cumin / jeera
  • 1 inch cinnamon stick / dalchini
  • 1 medium sized onion (thinly sliced)
  • 1 inch ginger (finely chopped)
  • 1-2 clove garlic (finely chopped)
  • 1 green chilli (slit)
  • medium sized tomato (finely chopped)
  • ¼ cup peas / matar
  • 1 carrot (finely chopped)
  • ¾ tsp kashmiri red chili powder / lal mirch powder
  • ¼ tsp turmeric powder 
  • ¼ tsp black pepper powder
  • salt to taste
  • 2 tbsp coriander leaf (finely chopped)

INSTRUCTIONS 

  • Firstly, heat ghee in a cooker.
  • Add cumin, cinnamon stick, bay leaf, cloves.
  • Sauté them on low flame till they run aromatic.
  • Further add thinly sliced onions, ginger, garlic (or ginger garlic paste) and green chilli.
  • Now add tomato and sauté for 1-2 minutes.
  • Add carrot and peas. sauté well.
  • Furthermore, add red chili powder, turmeric powder, black pepper and salt. Saute.
  • Now add paneer cubes and mix well.
  • Add rice and mix gently.
  • Add water.
  • Cover and pressure cook for 2 whistles or until the rice is cooked well.
  • Also garnish with coriander.
  • Finally, serve paneer pulao with black salt raita.
